Björn Frantzén’s path to the world’s only chef with three simultaneous three-Michelin-star restaurants began with a heart condition, a steak frites, and the Swedish Army.

A childhood that didn’t look like this
Björn Frantzén was born in Solna, just north of Stockholm, in January 1977. His upbringing was, by his own description, ordinary — working class, suburban, nothing fancy. His father was a car mechanic. His mother sold construction timber. He was a bread-obsessive who barely ate anything else. By thirteen he had been admitted to AIK, one of the biggest football clubs in Scandinavia.

A heart condition and a career change
At nineteen, Frantzén was forced to abandon his football career due to a congenital heart condition — incompatible with professional sport without a pacemaker, which he didn’t want. He enrolled in culinary school, then cooked in the Swedish Army before working his way through some of Europe’s finest kitchens: Chez Nico’s at 90 Park Lane, Le Manoir aux Quat’ Saisons, and Alain Passard’s L’Arpège in Paris.

1990
The steak frites moment. A meal at a friend’s family brasserie plants the first seed of culinary curiosity.
1992
Joins AIK football club. Plays professionally for one of Scandinavia’s biggest clubs.
1996
Heart condition ends football. Culinary school, then the Swedish Army kitchen.
1998
Interns at Edsbacka Krog under Chef Christer Lingström — Sweden’s most celebrated restaurant at the time.
2000–06
European kitchens: Chez Nico’s (London), Le Manoir (Oxford), L’Arpège (Paris).
2008
Opens Frantzén/Lindeberg in Gamla Stan with pastry chef Daniel Lindeberg.
2009–10
First and second Michelin stars in consecutive years.
2013
Lindeberg departs. Renamed Frantzén. Two stars retained.
2016
Invests 75 million SEK in a new three-floor location on Klara Norra Kyrkogata.
2018
Third Michelin star. Sweden’s first and only three-star restaurant.
2021
#6 in the World’s 50 Best Restaurants. Zén in Singapore also three-starred.
2023
#1 on La Liste — the world’s most comprehensive restaurant ranking.
2025
FZN in Dubai awarded three stars. Only chef in history to simultaneously hold three three-Michelin-star restaurants.
